    The first day of winter has arrived! With cooler weather settling in across the South Coast, we're craving meals that are warm, nourishing, and simple to make.

    This creamy bone broth rice uses everyday pantry staples to create a comforting meal that's full of flavour without requiring a long list of ingredients. Rich bone broth, buttery basmati rice, parmesan, and fresh herbs come together to create the perfect bowl for a cosy evening at home.

    Whether you're looking for an easy weeknight dinner or a nourishing side dish to accompany roasted vegetables or slow-cooked meats, this simple recipe is a delicious way to welcome the season.

    Creamy Bone Broth Basmati Rice

    Ingredients

    • 1½ cups white or brown basmati rice
    • 5 cups bone broth (for white basmati) or 6 cups bone broth (for brown basmati)
    • 2 tbsp butter
    • 1 tbsp olive oil
    • 1 onion or 2 shallots, finely diced
    • 2 garlic cloves, minced
    • ½ cup grated parmesan
    • Sea salt and cracked pepper, to taste
    • Fresh parsley, to serve

    Method

    1. Heat the butter and olive oil in a large saucepan over medium heat.
    2. Add the onion and garlic, cooking until softened and fragrant.
    3. Stir through the basmati rice and cook for 1 minute.
    4. Pour in the warm bone broth and bring to a gentle simmer.
    5. Cook until the rice is tender:
      • White basmati: 12–15 minutes
      • Brown basmati: 30–35 minutes
    6. Once cooked, stir through the parmesan and an extra knob of butter.
    7. Season with sea salt and cracked pepper.
    8. Serve topped with fresh parsley and extra parmesan if desired.
