Ginger Black Sesame Roasted Cashews
These Ginger Black Sesame Roasted Cashews are one of those simple little recipes that instantly make salads, grain bowls, breakfasts, or snack plates feel a bit more special. Ingredients

2 cups cashew nuts

3 tbsp maple syrup

3 tbsp ground black sesame

1 tbsp coconut oil

2 tsp freshly grated ginger (or 1/2 tsp ground ginger)

Good pinch natural sea salt
Method

If using fresh ginger, grate finely and set aside.

Grind black sesame seeds in a spice grinder or high-speed blender until fine.

Heat a pan over medium-high heat and add coconut oil.

Add ginger and maple syrup, stirring for around 30 seconds until fragrant.

Add cashews and ground black sesame, tossing continuously until the cashews become golden and coated.

Finish with a good pinch of natural sea salt.

Spread onto a tray or baking paper to cool and crisp up.

Enjoy over salads, breakfast bowls, yoghurt, or straight from the jar as a snack.
Store leftovers in an airtight container.
